Here is a delicious recipe for mashed vegetables, parsnips and potatoes, one of the most common and one that is back in style.
Ingredients for 4/6 people:
- 1 parsnip
- 1 kgpotatoes
- 1 clovegarlic
- 1 onion
- 15 cl of fresh cream
- 25 cl of milk
- 25g butter
- Salt pepper

Parsnip puree recipe
Parsnip puree is an original and tasty alternative to traditional mashed potatoes.
But beware, the parsnip has a very pronounced fat and it is essential to combine it with another vegetable, here with the potato.
You need about 1/4 of parsnip for 3/4 of a potato.
- Start by peeling then cleaning the parsnip and the potatoes
- Cut the vegetables into pieces
- Mince the onion
- Crush the garlic
- In a large saucepan, melt the butter then brown all the parsnips for a few moments
- Cover with milk then cook for 5 min
- Add the pieces of potato and cook for another 20 min.
- Crush with a puree press (avoid the blender because the texture of the parsnip puree is important)
- Add the sour cream
- You can add a little milk if necessary to make the puree smoother
You can serve this good puree with poultry, game or a good piece of beef ...
